Ani, I love your … Ani, I love your videos. I use lucuma myself. In this video you say it is a root plant, which it is not (maybe you thinking about yacon?). Lucuma is a highland sapote species (pouteria obovata), very closely related to mamey and canistel. Lucuma naturally has very dry flesh, and so traditionally it is dried.
sorry for geeking out- pomology (study of fruits) is my profession., I grow all sorts of fruits. I love what you do here, yours are some of the best raw recipes out there!

Lúcuma isn’t from … Lúcuma isn’t from de Andes of Perú? In fact in my country, Peru, Lúcuma Ice cream is very popular, probably the best flavors of all. Thanks for sharing.
gwenhwyfar187 – yes … gwenhwyfar187 – yes, feel free to use agave instead of yacon syrup. same proportions. will keep as long as any other traditional ice cream, say a month or more in freezer.
shockthesky – it helps to first grind your nuts in to a powder, then place in your blender when using less powerful blenders.
I went and bought … I went and bought lucuma specially when I heard about this! Is it okay to use agave if I can’t get hold of yacon? And how long will it last in the freezer?

for some reason, … for some reason, the whole dried and powder don’t taste the same as they syrup. the syrup is molasses-like, super good. haven’t tried to make with powder, but i’d stick with syrup.

zombeeefetish – In place of nuts, I might try germinated buckwheat oats. Soak the oats overnight in your fridge in *just* enough water to cover them. The raw buckwheat will absorb almost all of the water over night and become soft and turn creamy when blended. I use them in my raw granola and for blending in raw puddings all the time.
